Stuffed Apples with Chocolate Sauce

PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
1 lb apples
0.7 oz. maraschino
1 oz. whole assorted candied fruit
1 Ecodose of water
7 oz. sugar
cinnamon to taste
cloves to taste
1 lemon
0.2 oz. butter
1.7 oz. custard
0.2 potato starch
1/4 cocoa powder
0.4 oz. almonds cut into strips
PREPARATION
Wash two apples and cut them in halves. Remove the core with a core remover and then empty them slightly. Blend the apples with lemon to avoid them from darkening and to season them. Cut the rest of the apple into small squares and spread it with the butter for a few minutes in a nonstick pan. Place the apple squares in a bowl, add the custard, candied fruit, 1 oz. of sugar, liquor, almonds cut into strips and mix them well together. Stuff the apples with the mixture and put them in a bowl with 2.5 oz. of sugar, ½ cup of water, cinnamon and cloves. Put the closed bowl in a pressure cooker, add 1 ½ cups of water and cook for 6 minutes from the first whistle. In the meantime make the chocolate sauce. Put the 3.5 oz. of remaining sugar together with the leftover cocoa, ½ cup of water and flour in a saucepan. Bring the sauce to a boil and cook for 5 minutes and stir. Serve the apples warm with chocolate sauce.
