Stewed courgettes with poached egg

PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
-4 medium sized courgettes
-1 onion
-1 ecodose of tomato purée
-1/2 ecodose of water
-4 eggs
-extra virgin olive oil
PREPARATION
Finely chop the onion and cook it on a low heat with oil directly in the pressure cooker without the lid.
When the onion has softened, add the diced courgettes, the ecodose of tomato purée and the ½ ecodose of water (125ml).
Close the cooker with the lid and after the "hiss", lower the heat and cook for 5 minutes.
At the end of cooking, turn off the heat, vent the valve, remove the lid and break the eggs directly into the cooker with the courgettes.
Close the lid again and after the "hiss", lower the heat and cook for one minute. At the end of cooking, turn the heat off, then wait for 4 minutes before opening.
You will find the eggs are poached, to be served warm with the courgettes.
If you like your eggs cooked longer, cook them for two minutes but always let them stand with the cooker closed.
