Steamed red mullet fillets

16 red mullet fillets
2 carrots
2 courgettes
20 leaves of baby spinach
chives
balsamic vinegar
1 lemon
extra virgin olive oil
salt and pepper
kitchen string
PREPARATION
1. Flavour the red mullet fillets with a little olive oil, lemon juice, and salt. Clean the carrots and courgettes and cut them into strips lengthwise. Blanch for 30 sec in salted boiling water, then drain with the spatula keeping the water in the pot.
2. Arrange 8 fillets on a chopping board with their skin side down. Distribute the vegetable strips and spinach and cover with the remaining fillets, skin side up. Tie with raffia or kitchen string, lay the stuffed fillets in the steamer, place it in the stewpot, cover and steam for 10 mins. In a little bowl, mix 2 tbsp balsamic vinegar, 1 tbsp lemon juice, 2 tbsp oil, a pinch of salt and pepper. Serve the fillets with the prepared sauce and decorate with chives.
