PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
800gr clean baby octopus,
2 chopped garlic cloves,
5 chopped parsley sprigs,
20 pitted black olives
½ Ecodose of white wine,
1 Ecodose of water,
¼ chilli pepper,
extra virgin olive oil,
salt.
PREPARATION
1 Wash the baby octopus and clean the inside. Marinade with 3 tablespoons oil, garlic and parsley, chopped chilli and a little salt. Let stand for 30 minutes.
2 Transfer everything to the cooker, pour the Ecodoses of wine and water, close the lid and cook for 20 minutes from the hiss.
3 Let the steam vent gradually, open the cooker and add the olives cut into rounds. Cook for another 3 minutes without the lid to thicken the sauce. Serve in individual bowls.
