Spaghetti with cockles

PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
2 cloves of garlic
2 bags of cockles
400gr spaghetti
1 sprig of parsley
extra virgin olive oil
PREPARATION
- Soak the cockles for a few hours in a bowl of salted water (better still overnight) This operation will remove any dirt.
- At the end, rinse under running water and put them in a wide pan on high heat until they open. Multicook, for me it is ideal.
- When open immediately turn off the heat (prolonged cooking might alter their taste) and set them aside.
- Start making the spaghetti, take care to drain it al dente.
- Brown the garlic cloves in oil always in the Multicook, add half the chopped parsley and add the cockles (you may sell some of them).
- As soon as the spaghetti is ready put it in the pan and toss for a few minutes. Add the rest of the chopped parsley and pepper to taste.
