1 teaspoon maizena
juice of half a lemon
- Heat the sugar with the butter and juice of half a lemon in a double boiler.
- Turn off the heat, add the raspberries and blend with the immersion blender.
- Turn the heat on again, always in a double boiler, add the eggs and stir for about 10 minutes, until the mixture has achieved the desired consistency.
- Pour into two jars when the curd is still hot, let it cool and store in the fridge.
