PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
-400gr potatoes
-3 ecodoses of water
-80ml milk
-2 egg yolks
- extra virgin olive oil
-40gr grated Parmigiano Reggiano
PREPARATION
Peel the potatoes and cut them into large cubes. Place them in a pressure cooker with the 3 ecodoses of water (750ml).
Close the lid and after the "hiss", lower the heat and cook for 10 minutes.
At the end of cooking, remove the cooker from the hob, vent the valve and remove the lid. Remove excess water and whip. Add the boiling milk, heated separately, into the pot, then the yolks and extra virgin olive oil, and finally the Parmigiano.
