INGREDIENTS FOR 4 PEOPLE
-150gr peeled almonds
-150gr sugar
-1 untreated orange
-1 untreated lemon
-4 eggs
-300gr carrots
-50gr flour
-1 sachet baking powder
-for the Royal icing
-300gr icing sugar
-2 egg whites
-4 drops lemon juice
PREPARATION
- Blend the almonds with the sugar and grated zest of the citrus fruit.
- In another bowl whisk the eggs with the grated carrots, then add the almonds
- Fold in the two mixtures and add the sifted flour and baking powder.
- Butter the mould and pour the mixture, bake for 10-13 minutes at 160 degrees then raise the temperature to 180 degrees for another 40 minutes, take out of the oven and let cool down
- In the meantime prepare the icing, add the icing sugar and the drops of lemon juice to the egg whites and mix very well
- Put the mixture in a piping bag and decorate to your liking.
